If you’re able to make your way around town, here are my go-to’s for that good good:

DW Bistro (Southwest Summerlin)
Bachi Burger (Green Valley)
Setebello (Green Valley)
Secret Pizza Place (Cosmopolitan)
Spicy Tuna (Henderson)
Yard House (Red Rock / Town Square) has a great selection of beer.
Downtown Cocktail Room has the BEST cocktails in town.
Vesper Bar (Cosmopolitan) Proper cocktails as well.
The Griffin is great for cheap drinks, good bee selection and Live Music / DJ sets in the back room.
